True to those who trained us, we have maintained a balance between traditional vinification and a more modern method. Where, once upon a time, whole bunch vinification was the norm, now we adapt vinification according to each cuvée, to the age of the vines and to the more or less sun-drenched characteristics of a vintage. Only the special cuvée celebrating our father which comes from the Beauregard Premier Cru part of our vineyard parcel in Santenay is made from 100% whole grapes. This is the corner stone of our roots, the building blocks of who we are.

In keeping with current times
In the winery, concrete tanks, all equipped with temperature controls, have replaced wooden tanks. Thanks to the expertise of Tonnellerie Rousseau, we asked them to create a tank that combines wood and stainless steel for fermenting and aging our wines. In 2023, we acquired a new destemmer that also allows for sorting. This destemmer enables us to ferment a sorted and uncrushed harvest.
